This year we made 400 litres of Cab Sav, 200 litres or Merlot and 180 litres of a Cab Sav/Merlot blend.
We’re expecting something special from the Merlot especially this year.
200 litres of cab sav has gone through our “cold press” process, where we slow down the fermentation process so we get a full bodied wine.

    2010 cab sav grapes looked mouldy at bottom of each box

    Clamped destemer and worked great … Need another clamp

    Merlot … Wow extra heavy and looks like a ton of juice

    Cold press will sit until Thursday night

  • Met at the cellar to clean the lid of the cab-sav cold-press. A small amount of wine had flowed out of the lid’s valve and grew some beautiful velvety mould. The wine was untouched and clear as the wind-driven snow.
    The taste is lovely too.

  • I can tell you it was such a relief to see that the wine was totally unaffected. 200 litres makes a lot of vinegar and grappa 🙂

  • Rocky, Michael and Rob (Andrea another commitment) racked this year’s wine for the last night. This is the last racking for this year.
    There was only small amounts of sediment, the wine was very clear. They all passed the taste test. The Merlot especially is a cracker.
    We’ll be bottling around February.

    Thanks Claire, Maria and Lina for putting together the platters. They went down well with a bottle of 2008 Mataro (yes, Mataro!!).

    Rocky mentioned we may try some Cab Sav grapes from Yarra Glen for next year’s batch.

    Rob is going to follow-up on colour labels and dinner dates for next year.

    Michael is following up a stainless steel hose attachment “J” device to help with racking.

  • Hi Guys sorry I could not make it… I hear is all under control, Yarra Glen CabSav sounds good… we might be able to get some pinot noir from Seville?? in theme with the yarra valley flavour..

  • Rob has to win the BOTY (Baccala of the Year) award for screwing up the break-up of this year’s wine.
    I recorded that Michael gets 10% … I mistakenly put a “0” after the “1” 🙂

  • We bottled the cab sav, merlot and cab merlot.
    I enjoyed the bottling while I was at the Chemical Brothers show. 🙂

    We’ll do the cab sav cold press next week. Need to buy more bottles.

  • Bottled the last tank of 2010 vintage – the cab sav cold press.
    Purchased the bits and pieces for this year’s wine. Cellarplus in epping have all the ingredients in a kit – trying that out this year.
    All set to go to crush this Saturday!
